- (white potato, chicken, and roasted poblano peppers with a piquant salsa Verde sauce topped with crumbled Queso fresco)
Vegetarian Enchiladas
- (black beans, plantains, garlicky spinach, roasted red bell peppers, with a mild Guajillo Chile red sauce and goat cheese crumbles (we can omit dairy for any folks wishing vegan or dairy free).)
